Dad Asked If Wanted To Go To Tikal, Guatemala, what should i do?

I am 19, my parents are divorced, i live with my mother. My dad does a lot of traveling, he just sent me an email asking me if i would be interested in going to Tikal, Guatemala and Ambergris Caye, Belize in March. I dont know if i should go, feeling guilty leaving my mom alone for 7 days at home. Has anyone here traveled to either locations and how safe are they? Does anyone do a lot of flying because im still a little shaky with planes, do you feel safe flying? Thanks a lot
